Yesterday afternoon I was inspired to put together something different than the usual rice and beans.
Ingredients
1 ripe avocado
1 purple onion
1 clove garlic, minced
a whole bunch of bread fruit - it is a tasty nut that tastes a bit like bread
oil (olive would be better)
spaghetti, al dente
parmesan cheese
1. Acquire bread fruit. Boil it in water until the shells crack.
2. De-shell the bread fruit. If your host grandmother visits while you are deshelling, give her half of the nuts with salt.
3. Sauté the nuts, onion, and garlic with salt, oil, and seasoning.
4. Cut the avocado into bite size chunks. Remove the nut onion mix from heat and mix in the avocado.
Five. Serve on top of spaghetti with parmesan cheese.
It is currently avocado AND mango season. It is a wonderful time! I make a big deal of expressing what delicacies both of these fruits are in Massachusetts.
